Lancaster Cooks Earn Accolades

The Central Pennsylvania Food Bank (CPFB) held its annual Chopped Competition virtually in March as part of National Nutrition Month. Winners were selected in eight categories. Among the winners are Darlene Colon and Capt. Michael Buzzard of Lancaster Salvation Army.

The top two recipes were chosen from each category based on ease of preparation, presentation, and creative use of ingredients. Colon and Buzzard were the runner-up in the Main Entree division with their Spaghetti Squash Burrito Bowls recipe.

The annual Chopped Competition is a way for the CPFB's partner agencies, including food pantries, soup kitchens, emergency shelters, and more, to share resources and best practices for nutrition education and wellness that they can pass to the neighbors they serve on the local level. For this year's virtual competition, partners were asked to make a healthy recipe using squash, ham steak, and beans. Bonus points were awarded if a participant used more than one of the healthy ingredients in each recipe.
