Heritage Italian salumi class slated

Rock Hill Heritage Farm of Hershey will present its fourth educational class in September with professional butchers from Hand Hewn Farm. The master class will concentrate on pasture-to-plate and Italian charcuterie. Space is limited.

The Salumi Course Master Class will be held on Thursday, Sept. 21, from 8:30 a.m. to 5 p.m.; on Friday, Sept. 22, from 8:30 a.m. to 6 p.m.; on Saturday, Sept. 23, from 8:30 a.m. to 5 p.m.; and on Sunday, Sept. 24, from 8 a.m. to 3 p.m.

The hands-on immersive class will focus on the home production of cured meats in Italy called salumi. Four days of farm-to-table meals are included in the fee. On the final day, two meals will be included.
