Food and foraging programs set

Horn Farm Center, 4945 Horn Road, York, has slated three programs. There is a fee, and registration is available at https://hornfarmcenter.org. For more information, call 717-757-6441 or email education@hornfarmcenter.org.

Foraging for Roots will occur on Saturday, Oct. 5, from 9 a.m. to 1 p.m. As the autumn season winds down, plants begin to draw their energies into the ground to store them for winter. People can take advantage of this change and dig up the roots for various uses. During the program, participants will learn about roots that are suitable for harvesting at this time of year and discuss ecology, history, recipes, and how to harvest and process the plants. Presenters will walk attendees through the process of making dandelion root coffee, and samples will be available. Participants will get hands-on experience digging up and cleaning the roots. Attendees should dress for the weather and getting dirty. Both beginners and those with foraging experience are welcome.

Fermenting Sauerkraut will be held on Oct. 5 from 10:30 a.m. to 12:45 p.m. Participants will learn about the supplies needed to make sauerkraut and how this food can contribute to gastrointestinal wellness. Attendees will receive step-by-step guidance through the process of making sauerkraut, from massaging the cabbage to release its natural juices to packing the cabbage into a fermentation vessel and monitoring and adjusting the fermentation process to achieve a preferred taste. Participants will leave with a jar of homemade sauerkraut started.

Teas and Trees: Early Fall Foraging Walk will be held on Sunday, Oct. 6, from 10 a.m. to noon. The program will explore items that can be harvested in the early fall for food or other uses, such as wildcrafting and medicine. Ethical foraging will be emphasized. Both beginners and those with foraging experience are welcome.
